For this challenge I recreated my original Chocolate Peppermint Patty cookies which placed in the Lehigh Valley Most Dunkable Cookie Recipe Contest last year. It was my very first original recipe ever and I am very proud of it. So, I gathered up my new Sweet Creations baking products, like the High Temp Spatula, and got to work! Here is my recipe which incorporates the use of these amazing products!
Recipe: Chocolate Peppermint Patty Cookies
Ingredients1/2 cup salted butter3 squares (1 ounce each) semi-sweetened chocolate1/4 cup sugar1/2 cup packed brown sugar1 egg1/4 cup buttermilk2 cups all-purpose flour1/2 teaspoon baking powder1/4 teaspoon baking soda
8 mini peppermint patties
Instructions:
Put peppermint patties in the freezer and preheat oven to 350.
Melt butter and chocolate in microwave in a Sweet Creations Mixing Bowl, stirring after every 30 seconds until fully melted.
Stir until smooth.
In another mixing bowl, beat sugars and egg. Add buttermilk and beat in chocolate mixture.
Combine the flour, baking powder, and baking soda; gradually add to sugar mixture.
Chop peppermint patties into tiny bits (or place in food processor). Stir peppermint bits into the batter.
Let stand for 15 minutes or until dough becomes firmer.
Using the cookie dropper, place dough 3 inches apart onto ungreased baking sheets. Bake for 8-10 minutes or until edges are firm. Cool for 2 minutes before removing from pans with Flex Cookie Turner to wire racks.
Makes 2-3 dozen.
Review: The Sweet Creations products worked great! The Flex Cookie Turner was fantastic. If you would have asked me if I needed one I would have said that a regular turner would be just fine but this was so much easier to work with because it was the perfect "cookie size". My favorite spatula broke about a month ago so I was glad to have the opportunity to receive the High Temp Spatula. Not only does it work just as well as my last one, but it has measurements/conversions right on it! I liked the baking sheets as well. They were truly non-stick, were a great size, and cooked the cookies evenly. My favorite product of all was the cookie dropper. I tend to make cookies far too big so this allowed me to make the perfect cookie every time without having to roll them. I am not sure how I baked all these years without it!
Me using the baking sheets and cookie scoop with some peanut butter cookies...I can't stop baking!!! |
Next, I will be making some gingerbread cookies using some great cookie cutters! I will post the recipe and results soon.
