Did you know that October is National Popcorn Month? It is a great time to make some fall-themed popcorn balls and what a nice "treat" to give out mini bags of popcorn instead of candy to the local Trick or Treaters! A healthier alternative to sugary candy, JOLLY TIME Pop Corn is a guilt-free, gluten-free, high fiber snack. Chocolate Caramel Pop Corn Balls (Yields 8 popcorn balls)
Ingredients:
6 cups popped JOLLY TIME Blast O Butter Microwave Pop Corn
2 cups crisp rice cereal
14oz caramels (about 48 unwrapped)
2 Tbsp water
2 Tbsp butter or margarine
1 tsp ground cinnamon
1 bag of chocolate chips
Sprinkles
Wooden sticks
Instructions:
Placed popped popcorn and rice cereals in a large bowl. In a medium saucepan over low heat, heat caramels, water, and butter until caramels are melted, stirring frequently. Stir in cinnamon, Pour caramel mixture over popcorn and toss to coat well. Let cool about 5 minutes. With slightly dampened hands, shape into 8 balls around wooden stick (or use a pop corn baller). Place on lightly- buttered wax paper to set.
Melt chocolate in the microwave for 1 minute and then stir. If additional time is needed, cook for 20 seconds at a time until chocolate is smooth. Dip pop corn balls in chocolate and apply festive sprinkle. Place on wax paper and then in the refrigerator until chocolate hardens.
Wrap in plastic wrap; tie with a ribbon.
Results:
DELICIOUS!! Yes, it was a very time consuming process. In fact, it was so time consuming that I swore I would never make popcorn balls again....and then I tasted them. I assumed they would be similar to popcorn balls you can buy at the store but these were outstanding. They were moist, rich, and chewy. My family all loved them and we unanimously agreed that it was, in fact, worth the effort. Plus, they were so big that each one was 2-3 servings.
