Repurposing Left Over Buttercream - Cookie Cake Time!

I had quite a bit of buttercream left over from the Subway Surfer cake I made last week. Rather than tossing it, I surprised my kiddos with a cookie cake to celebrate their return to school. Since I still had the frosting in decorating bags (I like to keep them on hand until the cake is delivered in case of touch up needs and never got around to tossing them) decorating took me only minutes. I used a bagged cookie mix so this was a super easy and delicious treat! 

By the way, after the last few days of summer spent listening to my kids bicker and argue over every last little thing, I was totally ready for them to go back to school! How about you?
