Vermont Nut Free Chocolate Company Review

Vermont Nut Free Chocolate Company was founded by the mother of a little boy with a peanut allergy. The company is dedicated to ensuring that their entire selection is completely safe for those with any tree nut or peanut allergy but can also be enjoyed by anyone who loves fine chocolates. Their gourmet chocolate truffles, fruit creams, mint creams, caramels, raisin clusters, chocolate bars and novelty items are made in small batches the old fashioned way from the finest nut free ingredients. All of their centers are hand made from scratch in their nut free facility and then individually dipped into premium chocolate before being hand packed and shipped fresh to you. Plus, they offer some baking products so you can get creative with their fine ingredients!
Review: I was given a selection of baking chocolate to review. They offer chocolate chips in four flavors: milk, butterscotch, semi-sweet, and white. I used the Chocolate Chips, along with the Unsweetened Baking Chocolate (1/4 cup of this gourmet baking chocolate replaces a 1 oz baking bar) to make some double chocolate cookies that were perfect for dunking. I found the chocolate chips to be extremely tasty and a definite cut above the traditional chips found on your grocer's shelf. They had a very rich and delicious taste that stood out in the cookies. The Baking Chocolate melted perfectly and was extremely smooth and easy to work with.
Double Chocolate Dunkable Cookies
Ingredients:
2 cups flour
1 teaspoon baking soda
3/4 cup brown sugar
1 stick salted butter
3/4 cup granulated sugar
one 3oz package instant chocolate pudding mix
1 bag Vermont Nut Free Unsweetened Baking Chocolate
2 large eggs
1 teaspoon vanilla
1 bag Vermont Nut Free Chocolate Chips
Directions
Preheat oven to 375.
In a large mixing bowl, mix together the flour and baking soda. Mix in the chips and set aside. Mix together the brown sugar, granulated sugar, and dry pudding mix and set aside.
Melt the Unsweetened Baking Chocolate in the microwave for 1 minute. Remove and stir and return to the microwave in 30 second increments until the chocolate is completely melted. Add the butter and beat until light and fluffy. Add the sugar mixture and beat until light and fluffy. Add the vanilla and then eggs and beat until well mixed. Add flour mixture and continue to blend until mixed well.
The dough will be stiff and slightly loose and will likely require you to hand-shape dough into 1 inch balls. Place them on an ungreased cookie sheet about 2 inches apart.
Bake for 8-10 minutes and allow to cool.
Cocoa Powder - I used the cocoa powder to make some home-made brownies. The cocoa, like the other products, was high quality and the result was scrumptious and decadent brownies with an amazing chocolate flavor. I am definitely happy with the quality of this cocoa!
