I have been changing my eating habits recently and am trying to not only lose weight, but also permanently change my lifestyle to a healthier one. If I could eat shrimp everyday, I would. It is one of my favorite foods. Unfortunately, going out for shrimp dinner can get expensive and cooking from scratch is just not something I do very often. Gorton's has a great selection of recipes to choose from and I have made some in the past and have never been disappointed. This time, I decided to try the following super-easy recipe:
Scampi Shrimp with Broccoli & Linguine
Ingredients
12 oz Gorton's Scampi Sauced Shrimp
8 oz broccoli florets, frozen
8 oz linguine, prepared
Instructions
Combine Gorton's Sauced Shrimp in a large non-stick skillet over medium heat, cook 10-14 minutes, stirring occasionally, serve over linguine & enjoy!
Results: This was definitely a great quick weekday meal and it sure beats hot dogs and macaroni and cheese or whatever else gag-me-but-quick-to-make-meals that we tend to subject ourselves to when we don't have the time or energy to make a decent meal. It was a bit blander than I expected so if I make this dish again I think I will saute a clove of garlic in with the shrimp and broccoli and I think this would make a real difference with the taste. You could also add just about any vegetable you want. I used a whole grain pasta for the added health benefit. I also got some of the butterfly breaded shrimp for my kids to eat since I was not sure they would go for the Scampi Shrimp with Broccoli Linguine and it was an instant hit. They both love shrimp and were fighting over who got more!
